32 ounces in a quart
An entree serving can be considered 16 ounces (2 cups)
16 ounces X 20 people = 320 ounces
320 ounces / 32 oz = 10 quarts of gumbo
You’ll need a pot larger than 10 quarts for large servings
More than likely, you will serve 12 ounce servings, so you would need 7.5 ounces of gumbo for casual servings.
