A hobby you enjoy or a business that you enjoy. Like working at Bass Pro if you like fishing, Ace Hardware, etc. My dad is a bee keeper in retirement, works harder now than he did prior to "retirement" but loves it. I'm not sure what he makes but I'm fairly certain he makes over $30k. He stays busy doing removals and makes $300-400 per. He has a call list that's usually over 20 long for future work waiting on him.
There's all kinds of stupid shite like that you can make money on if you don't need to and have worked for 5-10 years on your skills. Cabinet and furniture making, specific repairs or sales like AntiqueTiger selling rubber dogshite on ebay. I just met a guy that buys and sells old fishing electronics on ebay and says he sells about $15k a month (no idea on actual profit), most of it he gets for free from a local guy that does new installs and gives him the old stuff. Old guys that don't want to learn new tech buy the older units off ebay from him when theirs shits out.
ETA: I always thought buying a piece of machinery would be somewhat fun, like a bobcat, mini excavator, trencher, or stump grinder. If you only need to make $30k you can easily pick and choose the jobs you want and when you want to work. Don't take any jobs from aholes or hard jobs, just take the local easy ones.
