Technically your plan will work, but the limiting factor is getting cell service with enough bandwidth to support it.
So if you can’t get around that by either sneaking on LSU’s wifi via direct/current connections or using Starlink, you are SOL

Which is why I said: Won't be on campus this week. Doing this at a place in Hammond with a bunch of folks.
And in the OP I asked a couple of different questions. Not sure why the hostile response.
The DirecTV website says I can run two devices hooked to TV's simultaneously but I am wanting to know if anyone has actually done it without issue.
My plan is to run direct from the phone (running the app) to a projector and a monitor via HDMI adapter and a HDMI cord. Not using a FireStick or whatever.
Is this workable or am I going to find out on Saturday none of this works?
