Luxury NYC Hotels Recs?

What are the Travel Board’s recs for luxury hotels in NYC. Looking to do a 3 night anniversary trip and would like to book something fairly plush.
Not picky about location, and don’t really care about on site dining (other than maybe breakfast) as we would generally plan to eat out and about in NYC. Would like a decent gym/steam room that isn’t behind a spa paywall.
Hotels I’m looking at are the Mandarin, downtown four seasons, dominic or the baccarat hotel. Have never stayed at any of these. In the past we’ve stayed at places a level down in NYC - the viceroy, the Warwick, intercontinental, etc.

For old world luxury and location, The Plaza is hard to beat. It is our preferred NY landing pad. The Waldorf Astoria is also world class, but it still is in the middle of a multi year renovation and won’t be open this year. The Aman is quite luxurious I am told. The Ritz is very nice and you cannot find fault with The Four Seasons. Please keep up informed and share some pictures when you return.

I had the Park Hyatt booked a few years ago I was super excited about. Unfortunately my wife had a high risk pregnancy and we had to cancel the trip.
