Does Jamie still own the company?
I had a talk with him once about this. I said Jamie, you have the best red beans and rice in the city, why do you screw it up with onions and cheese?
He said, that’s what the patrons want. I got tired of them asking for it, so I think it’s stupid, but I complied.
I said, you do that on chili, not red beans.

That's funny if true. Treebeards on Market Square was the first place I had them that way - they asked if you wanted them, didn't just dump them on - and now I like them that way.
It might've also been the first place where I had a link of sausage served with the red beans, instead of ham or sausage cut up and mixed w/ the beans.
