Unfortunately no contract just verbal agreement, and a history of payments reflecting a 40% payment based off previous months income.

You’re screwed. He’s figured out that he doesn’t have an obligation to pay you because there is no agreement. You’re paying for his renovation work. He probably tells you went everything is completed, that he doesn’t need you anymore.
