Ambergris Caye Excursions Belize

Going to Ambergris Caye next week with a group of friends. I've read a lot of the reviews on this board but wanted to get some input on excursions that we should do or stay away from.
We are thinking of doing 1-day lobster fishing/diving, 1-day snorkeling, and 1 day going to the mainland for the cave tubing/ruins.
On the days we don't go on excursions we plan to go to Secret Beach.
Thoughts? Anything else we should try? Thanks

You can spend an entire day doing fishing and snorkeling. We’ve been several times and always use Clem Calize for our fishing trips. Sometimes we go out twice because of the experience. He will make you conch ceviche on the boat while you fish and snorkel he will drive you to the great spots to see the stingrays, sharks, etc.
Take a day trip over to Caye Caulker, it is a slower vibe and a really cool thing to enjoy for a day.
Here is an older review, but many of those places are still open and much of it applies

Freshly caught Conch + Ceviche

Clem takes you to private lot and their cook does all your fresh caught fish for $10/pp
=====================
Lobster Curry Soup and Lobster burrito
=====================
The Split (hangout joint on Caye Caulker)

You’re in the wet season right so your cave tubing may not happen. FYI.
