You’re on the money. I highly suggest listening to Peter Attia, Rhonda Patrick, What I’ve Learned (YouTube channel), and Dr Pradip Jamnadas. You’ll get enough info from them on the modern American diet to know that we are 100% killing ourselves.

All of this. It's all on YouTube. I've been all over this for over 30 years.
If a person could only do one thing it would be avoid refined foods. Not just processed because everything is processed as soon as it is picked from the tree or crop. But refining, i.e. concentrating it and consuming it is the worst thing humans have ever done. You can track societies and their health and as soon as they started consuming refined foods then the occurrence of disease skyrocketed. Maybe if you have absolutely nothing available then ok but NO american is in that situation.
