crawdads are everywhere in TX restaurants now as well as live at HEB stores. it's never been easier to find them cooked or live. 5+ years ago live crawfish had to be ordered ahead of time from seafood shops. now you can walk into HEB and grab a sack, they don't take orders. lots of stores setup commercial boil rigs outside the front door & sell by the pound, too.
has production increased accordingly? i have no idea.
don't forget non-GMO & organic. made in the USA, nobody wants that crap from china.

Exactly. It’s what I always try to tell people when they wonder why prices stay inflated. Demand is so much higher now in Texas and they will pay a premium.
