When we did a kitchen remodel we went with one large sink. I would not willingly go back.
I'm the same. I went with the large sink mostly because it's the new thing and someday I will want to sell my house and need it to be more "current." However, I found this was the single thing I liked the most about my remodel and I didn't expect to care that much. It is so nice to have plenty of room to wash large pots or to put my instant pot liner and crock pot in it at the same time, or to have room to just stack all the stuff while cleaning the kitchen after a large gathering.
Tiny double sinks are worthless.
