I used to use one in nola and i can guarantee the people working the counter at that place arent putting in 60 hour work weeks.
If you plan on running the whole thing by yourself, sure.

The one I use never has anyone in the office. It is all text, online, and email. They are running two of them that way. I'm not saying there isn't anyone ever there but I am there frequently. The only time I see them is when they are dining at my restaurant.
