What's your location? There are generally always eagles around the Bonnet Carre spillway area, not sure of nest locations, but they hang out on top of the tall trees / poles over there often.

Also, not eagles or falcons, but there are tons of birds over in the Jungle Gardens at Avery island - try to hit it when the spoonbills are out there nesting and you'll see thousands of them.
