There are a few ways to do this.

Best career statistically at LSU
Contribution to LSU
Best players overall which brings in their Pro Careers.

Hunter has averaged 10.1 sacks a season in the NFL and he’s not 29 yet. He had 4.5 career sacks at LSU.

On this all time LSU team do we have all-time coaches? Or do we have Brick Haley?

You can also go by actually watching and seeing the players play.

For example, I said Wendell Davis at a WR, and Dalton Hilliard at RB. I don't care that they might not have the numbers some more recent guys have had, they were just as good.
Hilliard had more moves and cuts than Barry Sanders, he just didn't have breakaway speed... prob didn't have regular speed. His thighs were so huge he ran bowlegged. Probably would chafe if he ran a 40. But a beast in the game.

Re Wendell Davis, somebody (I think it was Chris Carrier) once told me that in practice, you could drop quarters on the field to lay out a route, and Wendell could run his routes with his eyes closed and hit the quarters- and then open his eyes after the last cut and catch the pass from Hodson. Again, no blazing speed, just a pure technician.

Defensive line, we've have tons of guys, I don't think I have seen better than Leonard Marshall. Lots that might be as good, or almost as good. None better.
Same thing to say about Michael Brooks at Linebacker.
