I've had hell with Spinach in 8a. I planted Swiss Chard and had really good luck with it. It'll get a lot of bugs in the heat if you don't treat it grows all year if there isn't a really hard freeze.
I did well with Mizuna as well for a tender salad green.

Not spinach
