I've met and talked to him three times. About 25 years ago, my GF and I wanted to eat at Bittersweet. I called up and it was booked. I called back, declared I was Doctor BrotherEsau and told them I was passing by and would be there at 8pm. Amazing the difference it made. Hostess said she'd seat me at the chef's table. We ate with Chef and about 4 other couples. Had a great fricking night. He kept the wine flowing well after dinner and we all got hammered.

About 5 years later, we walk into la crepe nanou and sit down. He was already there with a few people. Saw us come in, came over, remembered our names, said hello and we caught up for a few minutes. then he sent us a bottle of wine.

About 20 years after that, we ate at R'Evolution. Asked if he was in, and were told he was but that he had a cold and wasn't seeing people. Asked the server to tell him Esau and wife from 25 years ago at Bittersweet said hello and we hope he feels better. 5 minutes later he was at our table catching up again.

I think he's great.

These folks were not just requesting, but insisting that they be seated without reservations - And apparently several of these people did know Chef Folse - who on that entire night (with the Kitchen backed up) sat in that bar, holding court and waving on a procession of locales and dignitaries into the few seats available as soon as customers finished up their meals.

This constant bumping of our reservations continued as one-by-one an old friend or a dignitary would arrive and with a wink and a nod they would get seated - always in view of me, my wife, and a few other unlucky couples who, like us, had nothing more than a "reservation".


Damn, Cornpop, you should have been a doctor, politician or owner of a huge business...its way to much to ask a reatraunt owner to honor a reservation or show common courtesy.

Based on brother Esau and Cornpop's testimony, Folse sounds like a douchebag.

But I have always thought his stories sound made up (lies) and his accent sounds fake as hell.
