You should go into the park, I think it is open to Taggert Lake. Taggert lake is an easy hike that is pretty without a lot of elevation gain. It would be pretty easy in snowshoes if you have to, although maybe able to do it in normal shoes if the snow is packed.
If you drive north on 89 and stay just east of the park there is usually a bison herd just south of the middle entrance. Not sure how far up you can get but the drive up 26 into the national forest is beautiful.
You could also drive down to Alpine following along the Snake River. Grab a beer in Alpine at Melvin.
Snake River Brewing in Jackson is a good spot.
A snowmobile tour of Yellowstone is a bucket list item but I'm thinking November is too early for it.
I am guessing you already know this is a pretty funky time to go as there probably isnt enough snow to do winter things but enough to prevent you from doing summer things.

Yes no snowmobiling. But there has been snow and it’s been cold as hell so they’ve been making it nonstop. Resorts will be open.
