I can recommend a lot of things but they generally won't be touristy stuff. Here is my google map of amsterdam with my favorite places marked in yellow and you can see the majority of them are outside the City center/canal ring. The center and canal ring are great but generally very crowded with tourists, but in April it should be much better than when we typically are there in the summer.
Rent a bike
eat herring from a herring stand
hit some street markets
walk the canals at night
Take the free ferry across the Amstel to Noordilicht (sp) cafe and MDSM, a huge former ship building warehouse now full of artist studios
Vondel Park- go to the Blue Teahouse in the park for a beer
De Pijp neighborhood is full of bars and restaurants and is a more locals scene
Overtoom Road, the area we usually stay, is also a more locals bar/restaurant scene. Kartika on Overtoom is one of the best Indonesian restaurants in the city. Gollem is a great spot for beers, Cafe Eberling is great for coffee and snacks or breakfast.
Amsterdam has made ABnBs pretty much illegal. They still exists but there are many restrictions on them now.

I get both sides of the argument, but sad to hear this. Both our spots we booked in town were picturesque locations on canals. Our 2014 spot on Weteringschans was one of my favorite home bases in Europe.
