Edson Hill is a great choice. A lot of people like staying at Trapp for accessibility to trails for summer/winter activities. I've never stayed, but I usually go for some beers von Trapp Brewery. Fantastic traditional lagers.
You also might consider one of the hotels closer to Waterbury. Not too much of a drive to Stowe, and you have your choice of good restaurants and craft beer bars. Sort of my preference, but to each his own.

Went to HS in Burlington, so Chittenden County is a part of Vermont that I'm more familiar. I'd caution that it can get pretty cold with the wind coming off Lake Champlain, but Church Street is beautiful with the Christmas lights and cobblestone walk. Burlington has done a great job continuing to build out restaurants and bars, especially with UVM right there. Really nice campus, too, if you want to walk through it.
Hotel Vermont is a good option - right next to Hen of the Wood Burlington location and walking distance to Waterfront Park. Incredible sunsets over The Adirondacks.

I stayed at the Lang House in Burlington a couple of years ago. It's a B&B in a Queen Anne house about 3 blocks up the hill from Church Street. Nice place and they use local ingredients for their breakfasts (not like that isn't found everywhere in Burlington).
