Anyone who takes the 7 days creation narrative as absolute truth as in 7 modern 24 hour days is a little suspect.
I do think we were created and therefore have a creator for the record. I just think the genesis narrative isn’t how it happened.
The most fascinating take I have seen on the 7 day quandary was by a PhD theoretical physicist who went through the math of time and energy and showed how with God being pure energy 7 days for him could be millions of years.
I also have seen the math of the likelihood of a single amino acid being randomly formed in nature - almost if not completely impossible. Now take that extremely low likelihood and make it a left handed, not right handed AA and the likelihood goes to as close to zero as possible. Now that’s just one AA, multiply that by 20 or 21 (the base AA in humans) and you get basically zero chance. Oh, also throw in that the entire time these random acts are happening every step goes against the second law of thermodynamics and you can see why there are a lot of religious scientists still around.
Do they have all the answers? No. Will we ever? Sure at death we will all know for absolute certainty if we have a creator or not.

You have the most aligned thinking to my own thus far, but you articulated it far better than I.
