what is the name of the juice that is left over after cooking mustard greens?
If your from the south and especially the country and dont know this ...then you suck.

Cafeteria in downtown Dallas would boil shrimp in the mustard greens pot liquor and serve mustard greens and shrimp. Great taste!

There was a pretty popular band playing gigs around Baton Rouge in the mid-70's called Pot Liquor.

When I cook my turnip greens, I drop a few smaller new potatoes in the pot to cook. When they're done, they soak up the pot liquor and man they are delicious. They even have a green tint to them. You oughta try this.
I love pouring the pot liquor up in a bowl and masking up cornbread in it. Talk about good...

I remember them and used to see them at The Kingfish and once at Independence Hall when I was real little. Also saw the Doobie Brothers there when I was about 10 and my sister had to babysit. Damn pothead brought me to a concert.
I like mustard and turnip greens and eat the potliquor but I can't eat collard greens.
And to the poster above I will eat the hell out of a squirrel as well even though I haven't had one in years.

I was the same way until I moved up here. Collards are pretty popular. Real good bbq joint has fresh collards as a side dish I usually get with my pulled pork sandwich. (Some other choices: grits with hot peppers; fried okra; butter beans; green beans)
