The taco trend of birria is relatively new on the scene

Does birria translate to soggy? Soggy tacos is the devil.

ETA: I was joking, but then I searched for soggy tacos and guess what came up? Birria Tacos.

They are not crunchy, and they can be messy. If I'm making them at home, I don't usually drench the tortillas in the au jus, which helps a little, but they are still messy (and delicious).

you have to do a quick dip and not let them absorb, put them on as quickly as you can, put ingredients on in 30 second and fold and 1 min per side, I always make as mess trying to get it done quickly

slight crunch/chew to them.
