I have a handful of beans or soup/stew recipes I use it for.

It can do lots more and save time, but I usually have the luxury of time so just use a Dutch oven. The Dutch oven allows me to more easily add seasoning or ingredients throughout the cooking instead of all up front or at the end.

That said, I'm going to use the Instant Pot (some kind of Mandela effect makes people think it's called Instapot) this weekend to knock out some Indian style lentils/dahl that takes only 10 minutes under pressure.
