The boom boom (or bang bang) shrimp.

My vocation causes me to eat out constantly in different areas of the country. One thing I like to get from time to time is a restaurant’s version of boom boom (or bang bang) shrimp for an app. Some are great, some not so much. This current iteration at the Biscuit Co. in Vicksburg MS falls in the not so much category. It’s just popcorn shrimp with way too much breading and a mayo based unevenly coated remouladish sauce with a smattering of chili sauce mixed in. Pretty terrible. If you’re in the restaurant biz, or thinking of becoming such, please do the following:

-Large Shrimp, not small, with the end of the tail attached for grabbing. 6 total is plenty for an app.
-Lightly battered. Tempura works well.
-Sweet but more importantly Spicey chili sauce coating evenly dispersed.
-Serve on a bed of good slaw

I do mines the same way I do Gobi or chicken 65. We call it Bong Bong shrimp cause its so good after, well you know what I'm talkin' bout.

The problem with most is they use frozen pre breaded shrimp and just fry them. Like sonic, those breaded and frozen food products are usually terrible.
