I’m picturing you looking at the clock, seeing that your cooked seafood has been sitting out for 1 hour and 55 minutes, and racing to the microwave to reheat it so you can eat it before it goes bad. Is it still safe after 1 hour and 59 minutes but as soon as it hits 2 hours, then it’s deadly poison? Lulz.

The paranoia expressed on here about food that has been left sitting out overnight is remarkable. I routinely leave food sitting out, covered, overnight because it’s a lot easier to reheat it from room temperature the next day. I made some fried rice with chicken and shrimp on Thursday and could only finish half of it. I put plastic wrap over the dish and left it sitting on the counter and reheated it in the microwave the next evening. It had to be sitting out for a good 16 hours. It was fine. I was fine.

If it looks, smells, and tastes okay, it’s okay. Trust your nose. Don’t throw perfectly good food in the trash just because you’re a nervous Nellie. What a waste.
