Is anyone else here using an ASUS AiMesh system with the AT&T gateway in passthrough mode? I have the ASUS system that can run WiFi 6 and I’m wondering if this is worth looking into.

I’m in htx. My speed tests show I’m getting close to gig speeds at the router. Device speed tests over WiFi are showing about 1/2 to 1/3 that speed, which seems pretty good still.

I can't address all of your post but my At&t BGW320 gateway can hit 700Mbps on a 2021 Samsung Galaxy.

I have the Asus ZenWiFi AX (XT8) mesh system and AT&T 1Gb Fiber with the BGW210-700 in pass-through mode. (I disabled most of the functionality of the gateway. Turned off wifi, iptables, etc.) I use the mesh system for wifi and ethernet.

I use a pair of 2.5Gb MoCA adapters for the backhaul. My office PC is across the house, so I setup the backhaul router in my office to plug in directly to it. The primary router is upstairs with the gateway.

Gateway speed test: 971 MB/s down 890 up
Office PC (wired) speedtest.net: 862 MB/s down 864 up
Mobile phone speedtest.net: 575 MB/s
(connected on 5 GHz band)

Tested Wifi6 card on PC: 884 MB/s down 855 up

My experiences with Wifi6 is that the speeds are great. If you're using it on a PC/device to watch videos, share files, etc, then you'll be happy. If it's to do something that requires an "always on" connection, then it's not as good as wired even if the speed is good.
