I'll assume that by rare in others, it would mean it would be hard to find said items in stores in other places.
So from when I lived in Houston, it was hard to find the following (but it got easier the longer I lived there)
Blue Plate Mayo
Diet Barq's
File
Pickled Pork / Tasso / Ham Seasoning
As far as the one thing I did when cooking that shocked people? Soaking red beans overnight.
