Maybe, this has been discussed, but how would such a schedule work in regards to the seccg?

The same as it does today. Your SEC record determines who wins the division. The issue is that since you don't play a full round robin within the division, who you play becomes a bigger factor. Right now, generally speaking, it would be advantageous to play more games against the East than the west. Avoiding us or Bama would be advantageous. You may not have a head to head to determine tie-breakers and within div record could come into play and since we wouldn't all be playing the same number of teams within div, you can get some wierd outcomes. Over a short time frame, say a year, it's unlikely to be an issue but it's a problem long term.
