Should I start with New Spring or The Eye of the World?

Eye. Without question.
I wouldn’t read New Spring until around after Book 5.
It’s not overly spoilery but there are some plot points in it that aren’t confirmed until around then, and if I recall that’s somewhat around the time it was published.
I actually never read New Spring until after Book 11 when I was waiting for 12 after RJ died.
Have fun. It’s my favorite series. But most of all: have patience. It sometimes takes awhile to get places as he has a bit of an old fashioned writing style and describes everything. It’s more about characters than plot. Don’t make any judgements on the series until after Book 4ish.

I read new spring last. After 14 books that took better part of a year it was a nice palate cleanser once you finish A Memory of Light.

NS helps tie together the reveals presented throughout the first three books, which complete most of the "stage-setting" for the remainder of the series.
I don't believe there are any spoilers if you read it at that point, and it helps solidify many of the historical references and sometimes subtle foreshadowing of the first three books.
It is set during the Aiel War and has good backstory for many of the characters, really fleshes them out, I think.

In the original publication it has a very large spoiler. It was changed after the first publication.
So unless you download a real old PDF should be fine.

I think it’s in the original short story.

Its all about that immersion, figuring out the world and how the characters are interacting with it and each other. A series that presents a couple interesting and unique concepts that can capture your imagination is really doing it right. The last book in a series is rarely my favorite for that reason.

I am a little more than halfway through Eye of The World, and it actually took me this long to get into it because of people saying it is overly wordy. Unless it changes drastically after this book, I haven't really felt that it over wordy with scene setting. I actually really like how long the story is taking.
I'll compare it to Dune because that is the last book that I read. I liked Dune a lot, but when I finished, I felt like it was 800 pages and not a lot actually happened on screen. With EOTW, I feel like everything is happening on screen. A ton has happened, and I am only halfway through.
I read before going to bed, and a few times I have been fine when my pregnant wife asks if I'm ready to go to bed at 9 so I can read for an hour or so.

Well, you'll be fine for the most part.
Books 8-10 are very often called "The Slog" by fandom because while there are some major events, not a lot happens and there are some characters that are just stuck in mud for 3 books.
But Books 1-7 and 11-14 fly by in my opinion.
4-6 are my favorite parts of the series.

4-6 is the pinnacle of the series and I'd put 2-7 up there with any comparable stretch in fantasy.
The Sanderson books don't quite reach that level for me but still a very good finish to the series.

I am really loving one, so this gets me very excited. I can't put this book down. I have been trying to find a series that did this for me since I finished ASOIAF for the second time 8 years ago.

Ya i found this growing before ASOIAF so i personally like it way more. I read ASOIAF after reading all the available WOT a few times and it didn't hit the same - but I enjoy a more magic intense series usually.

I still remember reading the chapter for D****** W**** in Book 6 for the first time and it giving me goose bumps it was so good. I re-read it 3-4 times before going to the next chapter. This was 20+ years ago.
