Playing Red Dead Redemption 2 has gotten me sucked into western history and was wondering what are some of the best books that go into the history of cowboys and some of the top outlaws?

Go to your local library and see if they have the Time Life Old West series

You're welcome

Check out The Badmen if you can find it. It’s a book/record combination that came out in the 60’s.

Western History:

Undaunted Courage
A Terrible Glory: Custer and the Little Bighorn

The Revenant is also a good, but likely embellished, western tale.

Read about "Liver eatin' Johnson"

Adapted into the film: "Jeremiah Johnson"

A lot of stuff written in the first half of the 20th century when many of the protagonists were still alive. Anything by Helena Huntington Smith is good.

"We Pointed Them North." Smith sat down with OG Montana cowboy "Teddy Blue" Abbott and just let him talk.

"The War on Powder River" about a range war between big and small ranchers in Johnson County, Wyoming.

Love those two. Replace Revenant w/ the more accurate Lord Grizzly. Also add The Big Sky and Blood Meridian.
