Let's talk asparagus

I've fond childhood memories of pulling off on a roadside and cutting wild asparagus, and recently, I've seen some absolutely gorgeous asparagus in stores for $1.99/lb (recently they've been around five bucks a pound), so I thought it would be worth kicking around some ideas for these lovely gems.

Bacon wrapped/grilled gets my nod.

Chilled asparagus soup with feta is a close second.

Wife cooks asparagus very often. She typically bakes them in the oven at 400 for 8 min or so... A little evoo, cracke salt, cracked pepper.... Son puts parm cheese on his.

The older I get, the more I love it. Did a purée the other night with it that was awesome. My favorite is blanching then coating in olive oil, salt, pepper and on the grill.

Yes indeed. I don't bother blanching though. They seem to turn out ok if tossed in olive oil, salt, pepper and then simply grilled. Actually, that's my preferred way to enjoy asparagus.

A couple of tablespoons of olive oil in a 12-inch skillet over medium high. Add the asparagus and season with salt and pepper. Cook the asparagus for about 5 minutes, moving around in the skillet.

Add a table spoon of butter and cover for 5 minutes. The water in the butter will soften the asparagus.

Continue pan frying for 5-10 minutes until spotty brown and tips are slightly crisp.

No better way IMO.

A like to wrap a few spears in prosciutto and stick them in the oven.

I had an amazing asparagus soup once. Would love to have that recipe and make it. Post yours if you make a soup.

Trader Joe's has incredible frozen asparagus. Spears are individually flash frozen so you can cook just what you need. They're thin spears with natural bright green color and best of all they usually cost less than fresh.

I had some last night. Steamed with crab boil added to the water, lemon, butter, and garlic sauce on top with some cracked pepper.

I also toss them on the grill about as much as the above method.

My wife cooks them in the microwave these days. I assume it's some Pinterest deal. They're pretty good. Not as good as a steak though.

I like to put them in a small amount of water, cover them with olive oil, garlic, salt, pepper, a dab of butter, and "boil" them on high until the water cooks out. If you use the right amount of water they should only boil/steam about 4 minutes on high.

You have to stay over them the whole time flipping/shuffling them around, but it's only 4 minutes.
