What do you love to cook?

I know there have been plenty of thread on favorite foods to eat.

What is your favorite food to cook?

I love to make a big pot of Brunswick stew. Smoked chicken, pork, turkey, rabbit, squirrel, onion, tomato, lima beans, corn, clove garlic, etc. Worchestershire, bbq sauce, mustard.

Simmer it down all day and pig out on it that night.

I also really like to cook an entire meal on the grill.

I like to do a lot of braising and big pot meals. I also like to do whole meals on the grill which was a big reason I went with the Primo Oval instead of other ceramics for the simultaneous direct/indirect capability.

Skillet roasted split chicken breast with chardonnay pan jus over roasted root vegies and butternut squash...Bottle of clean chard...

Osso Bucco is becoming one of my new favorite things to cook

I like cooking Indian curries

Usually do something simple like Salmon in the oven with some vegetables but I like to cook soups and such on the weekends

Seriously, cheap cuts of beef are probably the most enjoyable to me.

Same here. Love making Paella on the grill. Good mix of prep and active cooking which I enjoy. And then you have 20-30 minutes to sit next to the grill drinking beer or wine while the liquid is absorbed.

I love to boil crawfish, absolutely love it. Don't get to do it but on ce or twice a year up here but I have a blast when I invite the yankees over for a boil.

BBQ. The first warm days of spring. I take the cover off the pit. Light the coals. Put on my Speedos and do the first sunbathing of the season while reading a book and sipping a cocktail and smelling the smoke wafting over the deck.

My peace is only disturbed by the dog who wants something from my veggie and dip appetizer bowl. I take a raw carrot stick and throw it as far as I can so he will stay occupied.

Fajitas

Something about flank/skirt steak marinated for 24 hours in fresh oil and herbs. Add some nice citrus to it, cook over charcoal, and serve on homemade flour tortillas with fresh salsa.
