What ethnic cuisine will be the next big thing?

I saw an article where Anthony Bourdain says he thinks Phillipino food is about to blow up. I could see Peruvian getting real popular . Maybe Morrocan or Persian as well though they are fairly complex and use very expensive ingredients.

IDK but I wish BR would get an Ethiopian place. Had some in Denver and really wish I could get more.

Indian is going to see a second wave explosion. Fast casual Indian and Indian fusion joints. Think Chipotle of Indian food

I could see that. It's a very easy food to precook and hot hold for a fast casual type concept.

Deeper cultural Asian.
Think of cities along the silk road. From Constantinople to Calcutta to far China..

Chefs are going to dive deeper into old recipes.. and combinations from ages of trade.

I have been trying to convince my parents to start this for so long. Either that or a small Indian restaurant with no menu that only serves whatever my mom cooks that day.

Possibly Korean. I see new respect for kimchi, bulgoki and I sure wish we had one in BR.

Roti Grillhas been here for 10 years maybe and is our goto for takeout. There are a lot of Chaat places around here too.

Would love this.

Also, Hate to sound like a rube, just to point out that in some areas where it may be new, a buffet style would allow people to try and learn what they like. Would love to have one here in Mandeville. We had one a few years back but didn't last long. In a newer area need to have enough security to last through the "learning curve" period.

It's hard to convince people to pay more for what they think is a similar product. You and I both know that food prepared to order is significantly better than the buffet, but the average patron won't.

Baton Rouge had one of the best restaurants that no one knew about. It was a Colombian place called Montana's on Coursey. Great food and they had a butcher and grocery to boot. The national dish of Colombia is bandeja paisa which I ordered no less than a dozen times from Montana's. This is a pic of the dish...



Fried cracklin strip (Chicharrón), sunny side up egg, fried plantain, baked beans, avacado, rice, sausage, marinated grilled steak. Sounds like a perfect dish for Cajuns but the place never took off in Baton Rouge.

Lafayette had a really good Korean restaurant where Osaka is now, but nobody (except me) went there. It was my favorite place in town at the time.

Baton Rouge also had a Filipino restaurant which was called Pinoy. Good food there too.

Perhaps smaller cities just want their Burger King. Now closed is the Jamaican restaurant "Ronnie's Ribs" in BR, Seoul (Korean) Lafayette, Montana's in BR. It almost seems as if the ethnic concept is regressing rather than progressing, at least in cities less than a million people.
