Not sure nationally, but poke seems to be taking off in Louisiana. A place in BR, one in NOLA and another one opening in NOLA by the end of summer.

I guess the better way to put it would be the Pei Wei of Indian food. They would be clean, fresh, etc. Tarka here in Austin is a good place to look at as a model.

In Charlotte, Peruvian food is kinda the thing now with several places like Viva Chicken and Pio Pio exploding on the scene. Also, fancy taco shops everywhere.

Having lived in Manila for a few years in the 80's, I have always been a fan of Filipino food. That being said, most places I have seen make an attempt have only been popular with the local expats (in NY, Chicago, & NOLA), and can't seem to gain any traction with the non-Filipino crowd. The only restaurants that survive also have a market attached.

In most cases I agree, but there was a Chinese Buffet back in my hometown that was awesome. I ordered something off the menu a few times, and it just wasn't the same. I really think they had perfected their buffet items since they cooked them so much, and the random menu orders were just thrown together.
