You want to see the distinct difference eat Emerill's (New Orleans) and then make the 4 hour trip for lunch and have Lasyone's (Natchitoches). Those are two commercial enterprises with vastly different beans. You want to really know the difference eat at a locals house and in NOLA they will serve you soupy red beans with a small portion mashed. On the other hand in Natchitoches they will serve you a much more hardy, thicker, slop.

oh lord.

So what's the best po boy in Natchitoches?

Had one there. It was just okay. Bread wasn't good.

You're hilarious.

But, the Lasyone's meat pies are better than any in New Orleans.

I wonder why they are called Natchitoches meat pies since they are not sloppy and full of tobasco.

Natchitoches is a much better place to live than NOLA. Stay away from Texas St and you don't have to worry about crime, on the other hand in NOLA you're constantly at risk. I feel more safe in El Paso than NOLA. The food in Natchioches > than that trendy, overpriced, pretentious garbage in NOLA.

Dude, I will absolutely guarantee you that I know as much about Natchitoches as you do. However, I moved to N.O. when, I suspect, you weren't a gleam in anybody's eye. Natchitoches is a nice town. Let's leave it at that.

If you want to talk red beans, how can you leave out Robeline or Provencal?

I don't know about redbeans but I do know I have one kid living in Nola and one living in Natchitoches and the one in Natchitoches got her bike stolen and the one in Nola did not.

Putting redbeans in my crockpot tomorrow. A little Tabasco but no cumin.

You never see fresh sausage in red beans just smoked or Tasso. Why?

Most people like the smoked meat flavor...and smoked hocks are an excellent choice to add this flavor.

I shall not comment directly to this thread, yet post directly IN it. There are many reasons as to why.....

My finished product. Made with smoked pork sausage and tasso.

Looks like you start it NOLA style and end it Natchitoches style. Now you just need one of those Natchitoches poboys!
