I know some of you lift on Keto, so here's my question...
I've been back for about 2 weeks or so on Keto from a 4 month or so "break". I'm eating at a 5% deficit (2100ish calories per day at a 5/35/60 split) I feel like I'm hitting a wall in the gym. My squats recently deloaded from 230 to 205 and I've had to fight hard to meet my previous weeks numbers (greyskull program). Is this a combo of both not being fat adapted and deficit eating...one or the other? I don't feel my strength levels are at a point for my size to be causing me stalls at 2100 calories (I'm 6'2/210 20ish % BF guesstimated) Today my squat was 215 and it felt just as freakin heavy as the 230 I did a couple of weeks ago. It's frustrating.

I freak out and eat something slightly carby (like organic coconut water for potassium) when my ketostix turn dark purple. Then they go back to light purple. Am I sabotaging myself?

It's deficit eating that will do that to you al9ng with low carb. If squats are causing you problems the. You can do one of two things
Eat 50g of carbs before you lift on days 1 & 3 so you have carbs to help you through the workout, this will slow weight loss though.
Or you can switch back squats out for something else like front squats, get as strong as you can on those then go back to back squats and you will blow the previous method out the water. This is a part of Daunte trudal program and the greyskull powerbuilding program which is Johnny pains version of dauntes DC training program.

I may try and go back to adding in some Gatorade powder pre and post workout. the powder specifically is fructose based I believe...i may try the swap to front squats for a bit too, I've never done them before...I'm in week 7 currently, so I may grind out my 8 weeks with low bar and then run the next 8 with fronts

The color doesn't indicate fat burn and is actually fairly inaccurate. There just good to see if you're in ketosis or not.. Not ice useful info from them besides that.

twice a week for 7 weeks as per the program I'm doing, and prior to that 3 times a week for 2 weeks after returning to the gym from my shoulder injury, so yeah...I'd say I'm pretty consistent. I haven't missed a workout yet.

yea grind out the 8 weeks and switch out the low bar squats for front or you could do overhead or barbell hacks or zercher but fronts are going to have the least amount of learning curve and allow you to make the most progress. Just start light, set PRs and progress.
as far as the gatorade, I dunno if that would be my first option.
WHat does your current pre/intra/post workout nutrition look like? Might be as simple as adding in a light pre workout with some BCAAs for intra. If you need more you can always use a post and pre workout mix of 10g glutamine, 10g L-Leucine, 20g creatine. If you use Xtend by Sciavation with their creatine you can get the above mix with 2 scopps of xtend and 4 scopps of the creatine.
I know it seems like a lot but I find it really helps with recovery.
Also how is your sleep? getitng atleast 6 hours? maybe try to get 8.

I workout after work, so I've typically got a good 1200 calories or so in for the day before I go.
I take 5g of Creatine daily with my coffee, or in my pre-workout if I manage to forget. Just before leaving work or on the way to the gym (15 min) I'll drink a pre-workout, it's called C4...something the girlfriend bought and was going to waste and I take 1250mg of L-Arginine and it has 750mg of L-Ornithine in it as well.
Post workout is typically my protein shake, which is simply Isopure no carb protein (2 scoops for 50g protein) with unsweetened almond/cocount milk.
