Baseball is away at Tennessee, that puts it after cinco de mayo and Mother's Day and before Memorial Day , waiting to hear back from jeep freak

Yes they are, but I can tell you that the judges dont care if you put them in there, but they do not want to see them or anything else that is green, and it has to have a predominately meat flavor. When cooking for family and friends I like to throw a big bunch of chopped green onions in at the end after the flip, but if I am cooking for a JFA judge , no green at all

so what will be the rules?
- small pot
- any cooking method
- any ingredients
- certain cooking time frame
- entry fee


then for people to attend
- 5-10 for jambalaya samples
- buy own beer
- proceeds to local charity
- banner of Chicken on the outside

I could swing those as well ... gonna be in Baton Rouge that weekend for my Goddaughter's high school graduation.

I'd be participating as a "competitor," even though I would have no shot in hell ... I'll be the guy Stadium Rat's looking for. Tomatoes on deck. Jambalaya balls too.

It just has to be soft and fluffy, the color of a brown paper bag, have no black specs and be popped open like a hotdog bun paw. Is that so hard?

Man I wish I could make this. I probably wouldn't compete but I'd bring my deep fryer and fry up some catfish. Put a tip jar on the table. Any donation gets you 3 pieces of beautiful crispy catfish to go with your jambalaya. Then we can add that to the jambalaya kitty for donation.

I have heard that Layne will pull out his diamond magnifier loop out of his pocket and look at individual grains


But it is all good, when they are judging 150-200 plates of Jambalya they have to have a standard to go by, not everyone has to approve of the standard but at least everybody knows what they are looking for, most people including me, cook a little different for competition than for casual get togethers
