My weekends are bananas packed till mid summer tho. Maybe u schedule on a weekend im free.

I'd say limit the pot size to nothing over 5 gallons

My first thoughts, which could easily be changed, would be
No open fires (this is one that would not be debatable)
Cook brings everything and decides how big he or she wants to make it
all jambalaya must be cooked on premises, prep would be allowed before you get here
would have 3 hours to complete
provide one sample for the judges and the rest would be left up to the cook to get rid of
leave the parking lot as clean as you find it, take your trash home with you, and do not leave any gratin, veggies, meat, or anything else that would attract critters around
bring your own tent, we may be able to provide limited bathroom space but depending on how many people might need to rent a port a pot
Judging ????? that could get tricky, I would like to get a JFA judge, but we could work on that

Maybe have official judges and a seperate peoples choice award, everyone give out samples and have some way of voting for their favorite?

Make the People's Choice award $1/vote, then you can donate the funds to charity. Plus the really insecure can dump a bunch of cash to get bragging rights.

I'll cook a pot. Will there be multiple categories? i.e. Chick/sausage, pork, seafood
Also, in the interest of liberalism, I propose that all non-competing attendees redistribute no less than 3 bottles/cans of craft beer to the participants since we're feeding them.
