Darla, green onions are a good thing, unless your trying to fit into competition rules. I prefer my green onions and other unapproved flavoring so. But, sounds like fun!

This sounds interesting. I'm out of my league here in terms of jambalaya. Maybe I could learning watching y'all cook.

Now if y'all decide to have a FDB Crawfish Cookoff, I'm down.

Well he did offer me a chance to be a Admin last time I cooked a TD Jambalaya, and I turned it down.

As someone in the industry, don't let it get to big, or involve big public places..

It will start to get into some legal trouble if you do too much without the proper paperwork or safety procedures.

And honestly, everyone here could say they will participate, but when it comes to scheduling, you will get 5 competitors and about 50 to show...

But I'm definitely still in and won't call the cops

You wouldn't want green onions in a JFA judged plate.

Aren't green onions one of the ingredients they provide at the jambo festival cook off?

Set a date, give teams a month to prepare. Can't please everyone...looks like there's a good amount of interest in this event though. Don't forget the lurkers, they always show up.

I'll get some schwag from the beer distributors; beer signs, shirts, led's/neons and such. If Chicken makes this official, I may be able to get a distributor involved and have a beer truck/trailer there. I've also got a freakin huge parking lot in front of the bar we can use. I just need to pull a permit.

As jeepfreak says
Let's do this.

I'm thinking 2-4 man teams, and 12qt or 16qt pots and smaller.
(or else there's going to be a LOT of waste)

Heat source can be open?
Wood,gas, charcoal???? I dunno.

Judges need to be called in and unbiased.

Will there need to be an entry fee or a small admittance fee??

Also only two spots for Grant prize and runner up.

Better make it at least a 5lb rice maximum so the LeBlanc seasoning crew cab season it properly.

$5 to enter gets you 5 tickets for a sample and a peoples choice ticket. Eat your 5 samples and drop your ticket into a bucket for the one you think had the best Jambalaya.

As somebody suggested earlier, no need to limit pot size...it needs to be propane
