Are you using the white wine in the beer?

Right on! I did that once, but used Sauvignon Blanc grape extract and added it at fermentation. Awesome beer, imo.

Brewed a batch of 100% Brett pale ale, not imperial but should end up over 7%, wanted something a little bigger for this fall. I went with Simcoe, Chinook & Citra and will dry hop with the same.

I'll update everyone and hopefully provide some entertainment on our first "we should've used a blow off tube" moment. We brewed our 2nd batch on Sunday. Followed Palmer's Cincinnati Pale Ale recipe with some tweaks to the hops: 1oz Mosaic(60 min), 0.5oz Citra(30 min), 0.5oz Citra(15min). Used White Labs Califonia Ale yeast (WLP001).Pitched yeast at about 70F. Everything went well. We noted action before my brew partner left for work Monday morning:

That was a little alarming, but what could he have done when he's leaving for work This was the scene later that evening when we got home...

The fridge smelled pretty awesome, but we cleaned up the sludge and began setting up the blow off.

We'll let this roll in the primary for about 2 weeks at 68F, then the plan is to secondary in the Keg and dry hop with some whole leaf Citra.

Anyone here have any warnings or hesitations about secondary fermentation in the keg (serving vessel) or dry hopping?

What's your plan for those hops? Throwing them right in the keg, or do you have something to put them in? They could easily plug up your dip tube if you don't have some sort of screen or filter.

Yeah. We have a nylon bag we'll use we picked up from the Homebrew store. Was reading that the whole hops typically float, so some people use sanitized marbles to weigh the bag down. Also read that some people "wedge" the hop bag between the wall of the keg and the dip tube. Any experience with wither of those techniques? Does it matter?

yeah, I think we are definitely going to dry hop... just wanted to make sure using the keg wasn't a bad idea.

ETA: I'm the partner that is guilty of checking the carboy before work and then crossing my fingers... Thankfully it was in a closed kegerator. My living room would have been a mess otherwise...

dry hopping in the keg is pretty normal, but like B said, you'll probably want to put them in something so they don't clog your tube.

I'm still fighting off little pecan bits that I racked into the keg by mistake in my porter.

Had my busiest brew weekend of my career this past weekend trying to prep for thanksgiving.

Brewed 5 gal of my Black Ale on Friday, 5 gal of a pumpkin ale on Saturday, and 5 gal of a honey IPA on Sunday. I think everything was solid so looking forward to the finished products. Gonna keg up 2 batches and bottle up the IPA.

Not sure if you're using an 18"x32" bag or not but that's a huge bag to dry hop in. you could definitely get by with something smaller and that big of a bag will probably plug the dip tube.

Thanks. I just checked since I'm home now. We have the 10x23. I guess that still might be pretty big for dry hopping. Thoughts?

Consider tying some unscented (and sanitized) dental floss to the bag and extending out of the keg so that it won't hang down all the way to the bottom.

Oh, I just pre-ordered a pound each of 2014 Amarillo, Mosaic and Simcoe hops from Label Peelers. They also have Citra and Centennial available. I still have a pound and a half of Citra in my freezer, otherwise I would have gotten some of that too.
