Got a TON of leftover pulled pork...

From Saturday....thinking of making a big pot of navy beans, onions, and pulled pork. Any suggestions?

It freezes well. Tacos.

Vacuum seal it in serving sizes and freeze it. Whenever you want to eat it throw the bag in a pot of boiling water. You cannot tell it was ever frozen.

I always make a big tray or two of enchilladas and put in the freezer. Easy and very tasty.

This. Use Zappas Stache's stacked enchiladas recipe. His is vegetarian but just add the pork to it. It's a great recipe. LINK

Leave some out for nachos one night.

I made hogs head cheese with mine last year. Was a very meaty Hog's Head Cheese and pretty good. I was impressed with the finished product.

Makes for a good quick meal or freeze all of it and have it for another game or some other event.

I love taking it and cooking it down with onions, bell peppers and a bunch of mexican type spices etc to make tacos. Take some white queso and cilantro and top. Always good.

Leftover PP, shredded a bit more, makes a good meat pie or tamale filling. Or add a bunch of veggies for a pot pie filling...

Those Nachos are the best. I also like to make omelets with it.

Render a couple of pieces of bacon, sauté a head of chopped cabbage down, in the bacon drippings. Add your pulled pork to the cooked cabbage.

Tacos with corn tortillas, lime cabbage slaw, pico, sriracha and a little bit of sour cream.
