Can't seem to paste your post on mobile. Don't know that I can fault Rob for not wanting to serve reheated meat. However, I'm sure there are many considerations in making such a decision, mainly financial.

Problem with this type of place is people went out of their way because of the quality. If they make it shite, people won't go there and then it will be time to make another financial decision to shutter the place because you have no customers. They should of had somebody up Rob's arse the entire time he was there learning to be pitmaster though.

I hope he gets back in the pop up game so we can enjoy delicious BBQ again. It's too hard for me to drive to Belle Chasse during the week to get quality Q.

The BBQ I had at CCBBQ Sunday was about the same as I had at Blue Oak two weeks before.

I did get a Bloom while waiting in line....like a peasant.


I'm not sold Blue Oak is the best BBQ on that 1 mile stretch of Carrollton

I wouldn't be surprised if this was the plan the whole time.

They probably brought them in and look at the recipes and watched him for a few months and canned him like they had planned to the entire time.

It wasn't. I chatted with Burgau shortly after they announced CCBBQ. They wanted it to work with Rob, but they were clear from the start that the restaurant could move forward without him and he would be on a short leash based on his past.

Will try to find out some more details from Burgau out at Hogs if I run into him.

I don't know if it this has been mentioned in previous post but that little booklet that Rouses puts out every month or so "My Rouses everyday" has an interview with Chef Aaron and Chef Rob from Central City BBQ.

People seem to be saying the quality got low over the last month. I hadn't been in a while, so I didn't get to see first hand. Wise jumped off ship, so it must have gotten bad. Meanwhile the Joint quietly still keeps cooking the best Q in the city.

I wanted to try that place, a friend who worked at Rue kept telling me about it.
