Sweetbreads is number 1 on my food bucket list. I would try Durian, fried tarantula, lutefisk, etc. It's the episodes in Africa that have me grossed out the most.

I've had fugu, great if prepared right, wasn't a huge fan of raw pieces. You have to be in japan the right time of year to get it if you don't want farm raised.

Pretty shocked by all the foie and sweetbread responses.

For me it would be quality Ankimo and some more obscure sushi fish and shellfish. Also would like to try Sakura Niku (raw horse).

I really want to try fresh anchovies grilled right out of the water.

Agree.

My answers would mostly be stuff like this -- normal foods that you just can't get where we live. There aren't many "weird" items I haven't had that I would want. No thanks on rotten shark and whatnot.

This came off of a $1500 hind leg of ham. I would hope it was authentic.

I would eat 100 fried tarantulas instead of 1 durian. Fried tarantulas aren't bad, they taste like soft shell crabs.

Yeah, that checks out. Next time one of those hams finds it's way to you, I'll make an emergency trip to Houston.

Maybe a few ounces fall of the table...

Costa Brava Bistro in Belaire had it and the chef owner was hand slicing it. Went through half the ham in a weekend. It was the most nutty, buttery, and delicious Iberico I've ever had. The lesser quality legs did not have the same intensity or complexity of flavor. I wanted to act like leather face with the shavings off the bone ??

Mountain Oyster

When I was in school at Auburn there was a local guy that castrated calves every year and all the neighbors would get together and cook mountain oysters. At the time I wouldn't try them. But everyone raved about them.
Chitlins are another food that I have had several opportunities to try in the past that I regret not having tried.

Tried it and enjoyed it. But then again it was at the Met in Seattle. Anything you get there will be good.
