Need some Rice Advice

I’ve cooked lots of things over the years, but never really cooked rice. Am I supposed to rinse the rice before cooking? If so, do I rinse it until water stays clear? And if so, how damn long does that take????? I’ve been rinsing 3 cups of rice for about 10 minutes and the water is still cloudy!

You don't have to rinse it but I do rinse mine for about 30 seconds to a minute

You can, I believe the outcome is worth it. Do not rinse brown or parboiled rice.

Try putting the rice in a bowl, running cold water over it as you agitate the rice, and then straining the water out, about 3-4 times. You may have water logged your rice and may need to adjust your water in the recipe to account for water absorbed by the rice

I don’t think 3 cups is a lot of rice. Maybe he means rice cooker cups. 1 rice cooker cup is about 3/4 of a cup. But even so, my husband makes a (rice cooker) cup of rice for himself for supper.

My best rice is with a National Rice cooker (it steams the rice)

Better than boiled rice which I find mushy.

Wash rice until water runs clear (removes the starch)

Otherwise you will have sticky rice

To washed rice, add water to just below the rice surface (less water
needed than boiled rice)

About 2 parts rice to 1 part water.

Turn cooker on. Better than any boiled rice.

Rice is almost 90% starch. Rinsing removes the fine ground rice that is a product of the the rice grains rubbing against each other when it's handled.

To each their own. I prefer the texture of washed rice. I’ll still eat it if not washed.

2 parts water
1 part rice

bring water to a boil, add rice, stir until it almost boils again, reduce heat to low/medium low, cover

return in 20 minutes to perfect rice

never rinsed

if you want your rice to be sticky, don't rinse it.

if you want your rice to be separate grains in your dish, rinse it until it's not cloudy.

if you want it to be somewhere in the middle, rinse it a little.

I don't wash it for jambalaya but recently started washing it for any other dish...red beans, stews, etouffees, etc. and I really like how it comes out. Rice in pot, add about 1/4c of water and stir it by hand for ~10 seconds. Dump water and repeat two more times. Literally takes about a minute.

I rinse it once and pick out any ugly looking grains.. that might be mouse turds. I grew up on a rice farm.. I know what's in a rice mill.

It doesn't really effect the outcome of the rice, but it will help prevent boil over when you cover the pot. I rinse mine usually, but sometimes I don't. When I don't I just have to remove the lid for a second to let the bubbling subside. I find it easier overall to rinse and save the spillage. As pointed out by another poster, just stick in bowl, rinse, drain and repeat 3-4 times.

"rinsing" is a misleading term. You're more washing the rice. That's why it's taking too long. Just running water over it will take forever.





As far as cooking, I bring water to boil, cut heat down to low, cover and simmer for 12 minutes. Then cut the fire and let sit with cover still on for another 10 mins. Rice comes out great every time.

Interesting. I didn't know this. I guess disregard what I stated about it not really effecting the outcome.

^This is a good tip that someone else gave me years ago. I've followed it ever since and it does come out great every time.

We’ve had a Brazilian au pair for the past year. Prior to this, we rarely ate rice, but now I eat it every day.

She sautees a garlic paste in olive oil and then puts the uncooked rice in with it until it’s slightly toasted. After that she adds water.

You can also use chicken stock instead of water for cooking to give more flavor.
