Kamado Joe, smoking or grilling it does a great job. Looks good too. So far my longest cook was just shy of 20 hrs @ 240 deg. Never needed to add fuel. Made about 4 or 5 minor temp adjustments over that long cook. Two 9 lb butts were falling appart tender with moisture to spare....

Doing one for the Game. Rinse it and pat it dry, then coat with some olive oil, coat with your favorite dry rub. I put it on my Kamado Joe at 225 or so fat cap up. Grill hot and fast with your favoriete seasonings. a little wild rice and some grilled veggies. A little chilled white wine to wash it down...
Most of the bigger names, BGE, Kamado Joe and Primo all can be regulated with the temp control units by ordering the proper damper kit. The off brands and knock offs I am not so sure....

Not sure if they do but you may want to try Tramonte's Meat and Seafood...
Based on that size and if the heat were spread fairly evenly that should get you 5-600 degrees. If there are glaring hot and cold spots then the hot spots may be hotter than that....
What size is the grill. A BTU to sq inch of cooking surface is an imperfect but a pretty good general judge of heat potential. I have a 2 burner gas grill at home it has 55,000 btu's heating about 515 square inches of cooking surface. I get about 850 to 900 degrees at the cooking surface....
4 racks vertically in a rib rack and one laid on top. I just move them a little every hour or so, then flip them over about mid way. Works fine for me. The briskets are stacked on a secondary elevated rack. I just swap the two pieces of meet at about the halfway point....
The KJ has enough room for 8 to 10 good size hamburgers in a batch. As far as smoking meets. Should be able to do 18 lbs of brisket at a time 4 or 5 racks of ribs, or 2 - 3 8 lb pork shoulders at a time. Check out Alfrescogrills.com. They have double side burners that you can get a 12 x 18" griddle accessory for and still have 2 20K side burners if you wish to use them for something else...

Me thinks 250k btu may be a bit much. Will you be wearing a fire suite to get within 5 ft of it? That is 2X as much heat as most high pressure dyi crawfish boiling burners. 60 to 70K should be plenty to stirfry with an 22" wok....

Kamado Joe. Ceramic charcoal cooker, about 10 to 15% less than a BGE and a 20year warranty on all ceramics. Comes in different colors as well. cook anything from 200 to 800 plus degrees. Whether you are cooking for 15 minutes or 20hrs you wont have to add charcoal except at the start....
