I should rephrase the wording…maybe not “Old South” , but say a method style used around the world by cooking “Meats” by wood! I know your skeptical of only “Texas” bbq being prepared by beared soy-boys with a craft-beer in hand, jacked up rediculous prices and bland sides as I’ve experienced at several top 50 places over the past 10yrs. There’s only one “Texas BBQ joint I recommend and that is Louie Mueller’s that I have patronized and all the others are fair to good and I’ve tried just about all the current top 50 mentioned of this years TM

“Texas BBQ” way overrated…..
The world has been cooking meats with “wood” since the caveman discovered fire!
$30 for a pound of bland texas sausage?
$35 for a pound of brisket using SPG cooked at 225 degrees with red oak cooked low and slow…..Wow….nothing new here?
I’ve had brisket cooked exactly like so called “texas bbq” 60 years ago in a small town Louisiana bbq joint across the tracks that any “texas bbq” couldn’t hold a match against.
I’d say that “Texas Monthly” expand their reach and take a trip to Lafayette on a Sunday when BBQ is served at local dives and see what BBQ is really like…it’s not just the meats that are awesome, but the sides are over the top!

I was hoping to hear report of like "Pit" BBQ Joints....I do plan to vist Graysons BBQ in Natchitoches, had a co-worker say they serve some of the best BBQ around N Louisianan?

I'm looking froward to making a road trip throughtout Louisiana during next month and hoping to serch out BBQ Joints....Spare Ribs is my fav! Would luv to hear some of your fav BBQ eats?
