Louisiana or Crystal hot sauce with butter 2:1 ratio. Put into sauce pan and blend. If you want to up the temp, add Tabasco.

firstly Tabasco vs Crystal/Louisiana/Trappys cannot be compared to each other. Even though they are "hot sauces" they are totally different. I use both Tabasco and Crystal/Louisiana.

also keep them right side up..

for smoking brisket have a little of charcoal on the bottom, however use hickory, or pecan chunks, or the little logs that academy sells in the back with the grills. If you use the little logs, make sure you split them up in half or quarters.

I have eaten at the original one, and the new one. Granted for Mexican food - or tex mex as some may say - there are better places. However as this is a buffet there is some leeway. quite honestly the new one was a huge let down. The taco shells were stale, the chile rellanoes (spelling?) were more dough then chile / cheese. the enchiladas were not all that bad. But if you get stuck in the side room, its like eating on board a navy galley - very tight.

I read that Cure was a good old fashion bar uptown Nola. has anyone been there, and it is worth the trip. I have today off, so I was pondering in paying this place a visit.

Also if you want uptown, Cannons has a nice turtle soup and blackened redfish. But its always nice to go to Paquels Manalies (spelling?)
