Cajun Classic vs Bayou Classic Cast Iron
Posted by rajuncajun225 on 3/19/25 at 9:08 pm
Has anyone had experience with both Cajun Classic and Bayou Classic cast iron dutch ovens or skillets? Has anyone had poor experiences with them and would suggest other brands? Thanks!
Dancehall in Scott, Louisiana
Posted by rajuncajun225 on 7/22/24 at 8:58 am
I used to work for Best Stop Supermarket in Scott years ago and heard that it used to be a dance hall before opening as The Best Stop in the 1980s. Does anyone know what the name of the dancehall was?

Thanks everyone. I think I'll go get some Lejeune's sausage from behind the auto parts store in Lafayette.
Best Smoked Sausage in the Lafayette Area

I'm cooking a pastalaya for a pre-game party for =UL game on Saturday. I usually go with Veron's smoked sausage that I get from their supermarket in Lutcher, but I need some recommendations for some of the best local options.
Faux "Cajun" Items at Fast Food and Popular Chain Restaurants
Posted by rajuncajun225 on 3/6/23 at 9:39 pm
I am currently doing research at UL Lafayette on the commercialization and commodification of Cajun food in the 1980s. Does anyone who was alive back in the 1980s remember any of the faux "Cajun" menu items from that era that appeared at fast food restaurants and popular restaurant chains or any examples that exist today for that matter? (Emphasis on National Corporations)
Contemporary examples include Wingstop's "Cajun" flavored wings or Chili's "Cajun" chicken or shrimp pasta.
From research gathered from Shane Bernard's The Cajuns
- Pizza Hut "Cajun Pizza"
- Bennigan's "Cajun Chicken Salad"
- Chili's "Cajun Chicken Sandwich"
- TGI Friday's "Cajun-Fried Chicken, Blackened-Cajun Chicken, Cajun Chicken Fingers, and Spicy Cajun Chicken Pasta"
- McDonald's "Cajun Chicken Deluxe, Cajun McChicken Sandwich, and Cajun Biscuits"
- Burger King "Cajun Whaler, Cajun Chick'n Crisp, and Cajun Cheeseburger"
Not to mention Popeye's...
Any additional items remembered would be of great help, Thanks!

Beef sausage in Lafayette

Anyone know where I can buy a good locally-made all-beef (not mixed) sausage in or around the Lafayette area? Doesn't matter whether smoked or fresh.
Pork temple meat in Lafayette?
Posted by rajuncajun225 on 2/1/22 at 4:15 pm
Does anyone know where I can buy a couple of pounds of pork temple meat in the Lafayette area? I called up at two different places, but one does not carry and the other would only be able to order a large quantity for me. I'm willing to use pork shoulder but would prefer using temple.
