Thawing Frozen Gumbo

Hello Tigers!
I am a Georgia fan living in Atlanta. I made the trip to Baton Rouge last year for the game, and despite the outcome, had a wonderful time tailgating with some Tigers I knew, ended up being invited into tailgates of people I didn't know, and sat with some great season ticket holders. We had a blast, and I'm hoping we can meet in Atlanta this December.
I read the Cajun vs. Creole article on The Athletic, and wanted to reach out and see if anyone could recommend or share some recipes to make some of these dishes at home. Jambalaya, gumbo, red beans and rice, and etouffee are my personal favorites. But I'd love to try a good sauce piquante as well. I'm also open to recipes not mentioned here.
We have a local butcher from Louisiana so getting specialty meats is not a major issue.
