Suggestions for a Houston stay

Will be in Houston for a few days in March. Looking for some suggestions from some of the locals.
Any great hole in the wall Tex-mex restaurants?
Any sights not to miss (museum, aquarium, theater)?
Any tourist trap/things to avoid?
Planning on hitting up St. Arnold and Karbach one day. Any other cool brewery suggestions would be appreciated as well.
TIA

Let's start with, where are you staying? That will help narrow things down.

Downtown, near the Toyota Center.

Good call.
St. Arnold's & 8th Wonder in the immediate vicinity. Karbach a little farther away. Spindletap, Bakfish, 11 Below are all farther away, but good.
The Truck Yard is really close to, and will have most of the local brews available with food truck options.
Forget hole in the wall Mexican, go to Ninfas on Navigation, El Tiempo, or Irmas. Hit Pit Room, Truth, or drive out to Killens for some bbq. There are so many good food options, it's difficult to narrow it down. Google some of the more recent F&D board Houston rec threads. All depends on what you want. And what you want to spend. Finn Hall will be close to you as well. 10+ restaurants and bars in a cafeteria style setting. I haven't been yet but have heard lots of good things.
There are bars and tap houses up and down Main St. If you're staying near Toyota Center, you could walk or take a 5 minute Uber ride to everywhere I've named except Killens and Truth.
Skip the aquarium. It sucks. But the zoo is good and the museum of natural science is great. Im not sure what's playing at the Alley Theater, but its worth it for a show you like. Catch a Rockets game. Walk around discovery green. Pub crawl down Main.

Go to La Mexicana for breakfast if you want a locals joint-it’s the type of shite my grandmother/mother makes.
If the weather is nice, hit West Alabama Ice House for a Lonestar and a couple tacos from Tierra Caliente.
Nancy’s Hustle, Nobie’s, and UB Preserve are cranking out some of the best food in the city right now.
If you drink wine, Camerata is a great spot.

El Tiempo on Richmond.
Pinkerton's BBQ.
Pappas for a steak and glass of wine.
Coltivare for fresh italian fare.
Taqueria Laredo on Washington for three-tacos-and-rice-for-eight-dollars tacos.
What kind of scene/drink/food are you interested in?

For bars downtown check out Houston Watch Company and Public Services. Other favorite bars of mine are Okra Charity Saloon and Conservatory. Breweries close to you are 8th Wonder, St Arnold, and Sigma. St Arnold is the best location closely followed by 8th Wonder, but Sigma has the best beer IMO.
