Southern Italy Trip in May

Not my first time going, have done northern Italy and Sicily. This time we're going to be visiting Apulia ad looking for recommendations or thoughts on what to see and do. We'll also be going to Sicily again, can't stay away from there, it's amazing.
But if anyone has any recs for Apulia around Lecce, Matera, etc, I'd appreciate it.

Apulia: wonderful agritourismo called Terre di Preti on an organic olive farm just outside Peschici. LINK
The town of Altamura has a DOP style of bread, the famous pane di Altamura. Big sourdough loaves made with local durum wheat, baked in wood fired ovens. If you care about old food traditions, it might be worth a swing thru Altamura to sample the local loaf.
